Roast chicken and baked vegetables

Ingredients:


For the chicken:

  • 1 whole chicken (about 1.5 to 2 kg)
  • 2 tablespoons olive oil
  • 1 lemon, halved
  • 4 garlic cloves, crushed
  • 1 bunch fresh thyme (or rosemary as preferred)
  • Salt and pepper to taste
  • 1 tablespoon butter (optional, for browning the skin) For the vegetables:
  • 4 carrots, cut into large chunks
  • 3 potatoes, quartered
  • 2 onions, cut into large chunks
  • 1 zucchini, sliced (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar (optional)
  • Salt, pepper and herbs of Provence

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. Prepare the chicken :

  • Rub the inside and outside of the chicken with salt and pepper.
  • Insert the lemon halves, garlic cloves and thyme (or rosemary) inside the chicken.
  • Brush the outside of the chicken with olive oil and butter for a crispy, golden skin.
  • Prepare the vegetables:
  • In a large bowl, toss the carrots, potatoes, onions (and zucchini if using) with the olive oil, salt, pepper and herbes de Provence. Add the balsamic vinegar for extra taste, if desired.
  • Cooking:
  • Place the chicken in the center of a large sheet pan or baking dish.
  • Arrange the vegetables around the chicken in an even layer.
  • Bake for 1 hour 15 to 1 hour 30 minutes, depending on the size of the chicken. Baste the chicken regularly with its cooking juices to keep it juicy.
  • Use a meat thermometer to check that the internal temperature of the chicken reaches 75°C (165°F), especially in the thickest part of the thigh.
  • Rest:
  • Let the chicken rest for about 10-15 minutes before carving, this allows the juices to distribute well.

  • Carve the chicken and serve with the roasted vegetables.
